Northern Mexico has easily the worst food in Mexico, so kind of a weird argument. The really interesting Mexican cuisines are all in the southern half of the country (Oaxaca, Puebla and the like).

The desert regions have very limited offerings and are known for such "fascinating" things as dried beef, burritos, flour and wheat products and off-color cheeses. Probably the only interesting stuff up north is the seafood in Sinaloa and Baja.
