Twin Cities/Minnesota travel suggestion thread

I am planning a possible trip to the Twin Cities and the vicinity around the 22nd of August, and am fishing for suggestions for:

Breweries
Local Fish/Scandinavian influenced food
Fresh New American type restaurants (or whatever)
Non downtown interesting commercial strips

Lakes/state parks for swimming/kayaking/fishing/camping within a 3 hours of MPLS - could be in Wisconsin too.

I'll have around 5 days.
