They know a lot, but are often shortsighted in the amount or quality of information that they collect before making their judgements, or extend their area of specialization (often very focused) into things outside of their field of which they know truly nothing about. I have a lot of respect for all of my professors, but yes, some of them are just a bit too arrogant on topics outside of their specialty.
