Undercooked?!

First of all it’s cured and smoked, so it doesn’t even really need to be cooked. Guess you don’t like bresoala either. But beef should never be brown except on the exterior.

I have to admit that even in NYC, I would sometimes go to Mile End on Bond St for a Montreal smoked meat sandwich. Partly because it was a foodie place that wasn’t doing huge volumes for tourists, with more manageable portion sizes. But that stuff is definitely good.

I think the fact that it's got cinnamon (or chocolate in some cases) and is more of a meat sauce topping over noodles than what people generally think of as "chili con carne" in the United States is what grosses people out (this has been exacerbated because of articles written by the foodies at Gawker/Deadspin who bitch about how much Skyline repulses them). I used to make it all the time for college friends in California and most of them loved it.

I will do Skyline in a pinch (there's one five minutes from my grandmother's house in Newport, KY) and appreciate that I can buy cans of Skyline at Fry's grocery stores in Arizona (owned by Cincinnati-based Kroger), but my preferred chili parlor is Camp Washington Chili. Thank god round trip flights from Phoenix to Cincinnati have become somewhat affordable in the past several years...

Buffalo - food so good it will stop your heart, and available nearly everywhere that sells food in the area

Buffalo Style Chicken Wings - deep fried crispy, coated in butter and Frank's Hot sauce, served with celery, carrot, and bleu cheese dressing - also some unique local and regional variations like the "Smitty" wings of South Buffalo

Beef on Weck - thin slicked roast beef on a kummelweck roll (kaiser hard roll covered in salt and caraway seed) served with horseradish

Fish Fry - traditional Friday Lenten fish fry, beer-battered haddock (formerly lake pike, sometimes cod), served with fries, coleslaw, usually choice of potato salad or macaroni salad

Stuffed banana peppers - still growing in popularity, cheese stuffed and baked or fried, with unique local variations (like a clams casino stuffed version)

Sponge candy - an ephemeral candy - chocolate covered "sponge" which is an airy delicate toffee that is typically only produced in cooler months (it doesn't ship well to warm climates) - available in different types of chocolates and prices - there are many, many candy shops and producers all over the city (shown: candy case at Parkside Candies)

Controversial take, Joe's Smoked Meats is superior to Schwartz's. And Joe's isn't even in Montreal.

For Pittsburgh, it'll have to be Perogies. That or french fries on or with everything, which is surprising considering there's not a sizable Portuguese population here. So, I'll just go with perogies.
