I've been to the storied intersection of Main and North on many an occasion.
They are very good chicken wings. Not the best in Buffalo, mind you; or even Western New York. But I will take them hands down over anything and everything that's offered up in Vancouver (or Western Canada).
As for the evolution of wing flavour technology, if you are referring to organic, free-range chicken wings served up at Capers, or the Feenie-fancy "wings de poulet" at Cactus Club, then again, we must agree to disagree.
