For the quick route:
Look for Office Towers that have single night guards, perferably a tower you either work in or are seen in so the guard wouldn't be incredibly surprised.
Towers that have single guards that I know of:
Watermark Tower
Stock Exchange Tower
Fifth and Fifth
Befriend the guard, they will have you sign a liability form, and then could let you on the roof. Of course this is all their discretion and they really shouldn't be letting you do this.
Long route:
Talk to the property managers, maybe make a form letter of what you want to do, when, and whether you want it to be recurring. Offer to supply them the finished product and a couple other pictures of their building for their promotional materials en gratis in exchange for access.
Easiest way to get the letters to the property managers would be to drop off letters at security while walking the +15 network one day.
You won't get in with everyone, but there would be some that would be fine with it. Again, you would likely have to sign liability forms and whatnot.
