I know the overhead is comparatively low to brick and mortar restaurants, but I am surprised by the sheer amount of food cart pods proliferating. No sooner than one opens, another is planned.
For example,
Hillsboro Station just opened within the last year or so and now there's one that just finished construction on the site of the old
Weil Arcade that burned down on Main Street. Not sure how the market can support so many, especially with a lot of people still working remotely and just the cost of eating out these days. I know my family has cut back on eating out because it's impossible for us to not spend at least $70 for two adults and two kids. Throw in a couple beers and you're easily spending a C-note anymore. I know higher prices are the new reality, but I just can't wrap my head around most meals costing $17 or more, at even fast casual establishments.
